- 28 Ritz crackers
- 2 tablespoons peanut butter
- 1 cup semi sweet chocolate chips
- 2 teaspoons coconut oil
- sprinkles or jimmies if desired
Add about ½ teaspoon of peanut butter to the center of each Ritz cracker, and gently spread into a thin layer
Top with another Ritz cracker, and place on a wax paper lined plate or cookie sheet
Refrigerate for about 30 minutes or until peanut butter is firm
Add the chocolate chips and coconut oil to a small microwaveable bowl. Microwave in 15 second increments or according to package directions, stirring after each time until chocolate is melted
Use a fork to dip each cracker sandwich into the melted chocolate, allowing excess chocolate to drip off
Place cookies on wax paper lined plate or cookie sheet, and add sprinkles, if using. Refrigerate until firm
This is for a small batch/snack. You can easily double or triple the recipe. You can also add more peanut butter to each cracker if you like.
Store in an airtight container in the refrigerator for best results.
Use white chocolate, almond bark or candy melts instead of chocolate chips, and leave out the coconut oil. You can omit the coconut oil if using chocolate chips, but the chocolate won't be as smooth.
